Our 100% Espadín Agave
is harvested by hand
when it is 8 years old and
perfectly ripe.
Next is the “Jimar” process,
where the hard pointy
leaves of the agave plants
are carefully cut off, leaving
the Heart of the Piña.
The Piña is then
roasted in a traditional
conical-shaped
earthen stone oven
for 5 days.
The Piña is then
crushed by a
traditional stone
Tahona Wheel.
The crushed Piña is then
placed in traditional
wooden barrels with
crystaline water to ferment
for 8-10 days.
The fermented agave
is distilled 3 times over
the next 35 hours in a
Copper Still.
